Arroz con Pollo

We would like to share with you some of the recipes in which you can enjoy the delights of Belize. Gradually we will be giving you recipes for the most traditional foods of this country. Now, we hope that you enjoy some of the best dishes of the Cayo area. The following recipes are the traditional foods of the Mestizo.

 

 

Arroz con Pollo

Ingredients:   1-3 lb. Chicken                                     2 tbsp. Cooking oil

                   3 limes                                                3 or 4 threads Azafran (Saffron)

                   1 tsp ground Black Pepper             1 diced Sweet Pepper

                   ½ tsp. Salt                                  1 diced Carrot

                   3 plug Garlic                               1 medium Onion-chopped                                 Season all / Complete Seasoning (to taste)

 

2 lbs white Rice                                    1 ½  c.  Boiling water

                   10 minced olives

                   Frozen Green Peas

                  

                            

                                               

Method:

 

 Cut chicken into serving pieces; wash it with some lime, remove excess fat, season it with some complete seasoning, black pepper, season –all and 1 tbsp. Lime juice and saffron. Add the sweet pepper, onion, garlic, carrot; simmer in cooking oil until the chicken is half cooked.  Gradually add the rice, stir it constantly for 3 min. (be careful not to burn the rice). Add the boiling water and lower the heat, when the water evaporates, add the olives and peas; use a fork and stir. Continue to cook covered until chicken and rice are cooked. Serve hot.
